SWEET POTATO FLATBREADS

Have you ever gone through a phase of making Friday night, "Pizza Night"? Okay, if you're nodding your head agreeing with me, then save this post so you can make these on your next Pizza Friday!

Sweet Potato Flatbreads
(Gluten-Free)

Ingredients:
5 large eggs
1 sweet potato, baked then peeled
1/4 cup water
salt and pepper to taste
1 1/2 cup almond flour

How To:

Step 1 - Place all of your ingredients - except the flour and oil - into a food processor or blender. Blitz slowly, at first, then gradually increase the speed.
Step 2 - While blitzing, remove the lid and begin to add in the flour.
Step 3 - Pour your mixture into a bowl and set aside while you heat up a skillet over medium heat.
Step 4 - Add coconut oil to the pan. Using a ladle, pour out a small portion of batter, spread evenly. Allow the flatbread to cook on the first side for about 2 minutes, then flip.
Step 5 - Cook another 2 minutes, and then place on baking sheet. Top with your favorite pizza toppings! I chose fresh arugula, tomato, kalamata olive, and a dairy-free cheese alternative that I just rolled into little mozzarella balls.

Bonus - If you had cheese you wanted melted, you could pop these into the oven for a few minutes too.
